The struggle is real
Last week was busy, this week will be even busier! How on earth are we supposed to find time to make ‘homemade vegan protein banana bread’? Seriously. Are productivity hacks going to turn me in to Betty Crocker?!

Yes yes, I do admit, the pictures look absolutely amazing, I salivate just looking at them! Just look at those ingredients, sat there on a clean white backdrop, there’s even a pretty lotus flower next to the perfectly presented plate. Oh, and the videos make it all look so quick and easy! Mmmmm the nutrients!
Looking half respectable of a morning
But, is it just me, or is it often hard enough to get up on time, looking half respectable and not walk out forgetting your keys in the morning?! Let alone making an entire week’s worth of food ahead to nourish and energise you, expertly.
The difficulties with managing your time
I’m not saying everyone struggles with this. However, if you are working full time, have any kind of social or family life outside of your exceptionally busy 9-5, theres a really good chance you have felt this. This pressure to eat well and the dreded feeling of chopping vegetables for an hour and needing 12 containers to get it all ready, just seems too much when you are feeling the Sunday blues.
Sunday blues and meal prep dread
I have genuinely sat there looking at the kitchen, with all the ingedients there ready to go, and entirely decided against the whole debacle! Just because it just seemed like way too much work on a Sunday. How silly is that? What a total waste. I then ended up buying half my lunches and breakfasts out and about, massively regretting the money I spent on meal prep. You can then end up in a cycle of feeling bad and seeing the wastage and that almost makes you buy more stuff, because you feel bad and want to make yourself feel better!
Trying to make Gordon Ramsey style meals daily
It took a while for me to realise that I was making in all incredibly hard for myself. I was trying to plate up Gordon Ramsey meals each day x3, with variation each day to impress myself on how different my menu was everyday. Looking up all these different recipes to make that were super healthy and delicious and fresh! It seemed so easy when I was scrolling through the images of the recipes.
The practicality side of it all really didn’t occur to me until the Sunday, where staring at a mountain of veggies just made me feel sad ha. Well not sad, more overwhelmed and the ‘I just can’t be bothered’ voice popped in and that was that. I stopped off and bought my brekky wrap, ended up at Nando’s and felt so guilty the next day. Urgh. Why, why did I get the brekky wrap!
How to give yourself the best chance wth healthy meal preparation
Ok so, after many weeks of Sunday blues and meal prep dread, I discovered that there was in fact a way to make myself be more prepared and get excited about meal prep. The concept of making it easy, simply and quick. These meals DO NOT need to be fancy. They need to tick some boxes, protein/Veg/carb/healthy fats, but they dont need to be fancy. In fact if you try to go fancy, it’s probably not going to happen at all.
So forget fancy!
No seriously, forget it. There’s no point. By the time Tuesday lunch time comes around you’ll be too hungry to really care about what the content is. The fact that it’s homemade and ticks the boxes is all that really matters when all is said and done. You will also beging to get GOOD at meal prep and the time it takes to get everything toether will improve.

So this is all well and good, but how do you ACTUALLY do it? Well here we got then, here are my top 5 meal prep productivity hacks to help you enjoy healthy meal prep.
1. Boiled eggs
Call me crazy if you want to. However this little time saver hack was a godsend for me. Boil a carton of eggs and put them back in the box and chuck them back in the fridge. It’s the best snack, it actually fills you up, you can mix up how you enjoy it each day. Slice it and put it on toast, have it with avocado, eat it on its own! Lifesaver.
2. Healthy Museli Stash
Get a healthy stash of museli. I spend a bit more money on a good one with limited sugar and all healthy organic ingredients. I dont regret the money I spend on it one bit. It’s great as a nutritious breakfast and also as an afternoon snack if Im pekish. I buy Brooklyn Farm Byron Bay museli and it’s delicious. I have it with soy, almond or rice milk as dairy and I don’t go together (I found my skin reacted to it – acne), so milk options are at your discretion.
To keep the bad foodie decisions away, have an on demand stash of nuts in your drawer. It doesnt seem exciting now, but you just wait until the afternoon food cravings kick in. You are likely to get peckish in the afternoon. Your mind starts to wander in to the ‘naughty snack’ territory. However, the handy supply of nuts will keep poor decision making at bay. They are easy to over-eat so go easy, but enjoy them when you are hungry between meals!
4. Smoothies Smoothies SMOOTHIES
The easiest way to include nutrition in to a busy schedule, meal prep productivity hacks 101! Banana, almond milk, spinach, ice and bam! Theres your greens right there already in, your fruit and a declicious treat to start your day. Smoothies can be easily mixed up for varierty and you will feel more energised than reaching for the traditional morning coffee option. Try it out! My 2nd favourite is mango, avocado banana and almond milk. Yum!
I always thought that I had to create these super fancy gormet meals, until I was introduced to the worlds easiest and most convenient meal prep solution… Mince. Obviously if you are vegistarian this is absolutely not for you, the protein rich meat alternatives for mince are great too! I’m not vegetarian so this is great for me. Cook it up with some seasoning, do a big batch of rice or have it with salad. Beef for one day, turkey for another day! It’s super easy and satisfying come lunch time.
